Exact Formula for 150g of Quinoa

Quinoa is a fantastic side dish, but the most common mistake is using too much water (the old 1:2 ratio), which turns it mushy. To achieve a light, fluffy, and separate grain texture, the ideal ratio is 1 part quinoa to 1.5 parts liquid.

“Rinsing removes the bitter saponin coating, but the true secret to texture lies at the end: resisting the temptation to uncover the pot during the 10-minute rest completely transforms the result.”

Ingredients

Step-by-Step Preparation

  1. Friction Rinsing (Mandatory Step): Place the 150.0 g of quinoa in a fine-mesh strainer under cold running water. Rub vigorously with your hands for 1 to 2 minutes. This washes away the natural saponin coating that gives a soapy, bitter taste. Drain thoroughly.
  2. Toasting: In a small pot over medium heat, add the olive oil. Add the drained quinoa and toast while stirring constantly for 3 to 5 minutes, until excess moisture evaporates and you hear a gentle crackling with a nutty aroma.
  3. Controlled Simmer: Pour the 225.0 g of hot liquid and 5.6 g of salt into the pot. As soon as it reaches a gentle simmer, turn the heat down to the absolute lowest setting and cover tightly.
  4. Passive Simmer: Cook covered without lifting the lid for exactly 15 minutes.
  5. The Crucial Rest: Turn off the heat, remove the pot from the burner, and let it rest covered for 10 more minutes. During this time, residual steam gently fluffs the grains without making them soggy.
  6. Fluff and Serve: Uncover the pot and gently fluff the grains with a fork to introduce air.

Serving Tip: If serving alongside delicate fish, stir in some fresh lemon zest, chives, or chopped fresh dill right when fluffing with the fork.
