Step-by-Step Preparation
- Preheat Water: Heat the 500 ml of water in an electric kettle to optimize time and maintain cooking temperature.
- Toasting (Nacarado): Place a pot over medium heat. Add the olive oil, 3.0 g of salt, and raw rice. Stir constantly with a spoon so the grains are coated in oil and salt, until edges turn translucent and pearl-like. Avoid browning.
- Thermal Shock (Caution!): Briefly remove the pot from heat to avoid steam burns. Carefully pour in the boiling water and 1.0 g of sugar. Stir just once to combine.
- Electric Heat Control: Return pot to the stovetop. Since it is electric, transfer to a burner set to lowest heat (or lower the current burner, accounting for residual heat). Cover tightly right away.
- Cooking: Cook covered without lifting the lid for the time indicated on your rice package (usually 15-20 minutes), or until all water is absorbed. If using the same burner, turn it off 3 to 5 minutes early to utilize latent heat.
